LA Danger Dog

I lived in LA from ages 18-24. My golden era of fuckery. Working in restaurants, pulling double shifts and romanticizing the lifestyle of a struggling artist. I snuck into many clubs and stumbled out of even more bars. I've always been more of a dive bar kinda guy. Cheap drinks, good music and the chances of a danger dog waiting outside the band sticker-covered door were always good. It's safe to say that these booze-soaking dogs saved me out of many sticky situations. Although these will never come close to what you'll get in the street, they still make for a great homemade version. Here's the recipe.

Ingredients

4 hot dogs

4 bacon slices

4 hot dog buns

4 jalapeno peppers

1/2 red onion, julienned

2 large bell peppers, julienned

mayo

mustard

ketchup

Optional: Cotija cheese

Method:

This operation is quite simple. Begin by wrapping your dogs in bacon. Then place them in a cold cast iron pan and turn the heat to medium. Let the bacon render so it can cook in its own fat. Once the bacon is nice and crispy, remove from heat and save the bacon fat. Wipe down your cast iron that add back some of the fat. Make sure to strain the fat from any burnt bits. Bring the heat to medium high and sauté your onions, bell peppers and whole jalapeños until soft and charred. Once done, turn off the heat and place your buns on top of the peppers and close with a lid for about a minute or until buns are slightly steamed and softened. Once everything is ready- begin assembling. First place your bacon wrapped dog in its bun, add peppers, drizzled mayo, mustard, ketchup then top with a whole charred jalapeno. This pairs best with Mexican beer- Enjoy!
